White Tuscan Bean Soup Recipe

Ingredients

  • 2 tablespoons olive oil

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 4 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups chicken broth

  • 1 bay leaf

  • 2 cans (15 oz each) cannellini beans, drained and rinsed

  • 2 cups chopped spinach

  • 1 tablespoon balsamic vinegar

  • Salt and pepper, to taste

  • Grated Parmesan, for serving

Instructions

  1. Sauté the base
    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes, until softened.

  2. Bloom the spices
    Add garlic and the Tuscany Spice Blend. Cook for about 1 minute, until fragrant.

  3. Build the broth
    Stir in tomato paste and cook for 1–2 minutes. Add diced tomatoes and chicken broth, mixing well. Drop in the bay leaf, bring to a boil, then reduce heat and simmer for 10 minutes.

  4. Finish the soup
    Add cannellini beans and spinach. Cook just until the spinach wilts. Remove the bay leaf, stir in balsamic vinegar, and season with salt and pepper to taste.

  5. Serve
    Ladle into bowls and finish with freshly grated Parmesan.
